What is real mayonnaise?

Mayonnaise, as defined by the U.S. Food and Drug Administration's Standard of Identity, must contain at least 65% oil by weight, vinegar, and egg or egg yolks. It may contain spices and natural seasonings except turmeric and saffron, as yellow color might suggest added egg yolk. No emulsifying agents other than eggs are allowed, so real mayonnaise does not contain any starches or gums.

What are the ingredients found in Duke's Mayonnaise?

Soybean oil, eggs, water, distilled and cider vinegar, salt, oleoresin paprika, natural flavors, calcium disodium EDTA added to protect flavor.

What is the difference between real mayonnaise and whipped dressing (i.e., Miracle Whip)?

Real mayonnaise is defined by The U.S. Food and Drug Administration as consisting of at least 65% oil by weight, while whipped dressings are only required to consist of at least 30% oil by definition. While both products have a base of egg and oil and may contain other spices and natural seasonings, whipped dressing’s lower oil content and use of corn syrup contributes to its lighter consistency and sweeter taste. Whipped dressings can also include starches and gums, while real mayonnaise cannot, being that eggs are the only emulsifying agent allowed.

Is Duke's gluten-free?

Yes, Duke's is gluten-free.

Is Duke's GMO-free?

No, Duke's is not GMO-free.

Is Duke's kosher?

Yes, Duke's is kosher.

Are there any trans fats in Duke's Mayonnaise?

No. 0%.

Is Duke's really sugar-free?

Yes, Duke's Real, Light, and Flavored Mayonnaises are the only major mayonnaises on the market that contain no sugar. This is important for individuals on a restricted sugar diet.

Are the eggs used in Duke's pasteurized?

Yes, all eggs used in Duke’s Mayonnaise are pasteurized, which means they’re heated in order to destroy illness-causing pathogens like salmonella.

Do any of your plastic jars contain BPA?

The jars we use for our Duke's varieties are made with PET (polyethylene terephthalate) and have a recycling code 1. They have no BPA additives and are the same plastic used in most water and soda bottles. They are recognized as safe for food by the FDA.

Can Duke's Real Mayonnaise and Duke's Light Mayonnaise be used interchangeably?

Yes,they are interchangeable in most recipes, including baked goods. Duke's LightMayonnaise can stand more heat than Real Mayonnaise.

Can I cook with Duke's?

Yes. Think of Duke's as though it were any kind of shortening or margarine.  It's perfect for making grilled cheese sandwiches or baking a chocolate cake!  Check out our recipe page for dish inspo.

My chocolate cake collapses when baked at high altitudes. How should I modify the recipe?

The higher the altitude, the lower the air pressure. Increase your oven temperature to 375°F, start checking doneness up to 8 minutes earlier, decrease sugar by 1 tablespoon plus 1½ teaspoon (it's easiest to measure out the full 1½ cups and then remove the excess), increase flour by 2 tablespoons, or increase Duke's by about 3 tablespoons. It may take a couple tries to get the recipe right at your new altitude, so try to make only one change to the recipe each time you bake and keep track of which changes worked and which ones didn't.

Should Duke's be refrigerated after opening?

Yes. To protect the great flavor and wholesome ingredients, it is recommended to refrigerate Duke's Mayonnaise after opening.

Are Duke's Real & Light Mayos now 30oz?

Yes.  As of September 2022, Duke’s Real & Light  Mayos are in 30oz Jars (along with a number of other sizes like the 16oz jar, 18oz squeeze, and 48oz jar), but the mayo inside has not changed.  Duke’s  Real Mayo has been made using Eugenia Duke’s original recipe since 1917, always  naturally sugar-free, made with only egg yolks, no high fructose corn syrup and no artificial colors or flavors.

Does Duke’s charge Shipping & Handling on orders from dukesmayo.com?

Yes. Shipping and handling will be applied at checkout. Shipping is calculated on the weight of the product and shipping destination.

All orders are automatically placed with expedited shipping. Orders placed before 12p, Monday – Friday will ship out the same day. Orders placed on Saturday & Sunday, or after 12p EST will ship out next business day.

Why did my mayo separate?

Mayonnaise held at temperatures below 35 degrees F and above 90 degrees F may develop product separation and discoloration. While the product is still technically safe to consume, it will not look or taste appealing.

 Can mayonnaise be shipped in extreme (cold or hot) temperatures?

 Cold Weather Warning: If you are shipping to a location that is experiencing cold weather, please consider delaying your order until temps are warmer. Mayonnaise and mayonnaise-based products can separate if they freeze in transit. While the product is still technically safe to consume, it will not look or taste appealing.

 Similarly, mayonnaise & mayonnaise-based products that are held at temperatures above 90 degrees may develop product separation, discoloration, and loss of fresh flavor. While the product is still technically safe to consume, it will not look or taste appealing.

How should Duke's Mayonnaise be stored?

Unopened jars of mayonnaise, dressings, and sauces may be stored at room temperature. Refrigerate the jars after opening to keep the fresh flavor of the Duke's Mayonnaise. High temperatures will accelerate loss of fresh flavor while exposure to freezing or near freezing temperatures can change the consistency, texture, and thickness. Excessive heat during storage can result in browning and off flavors.

How long is Duke’s Mayo good for after its best by date?/Can I use Duke’s after its best by date?

We cannot recommend a time beyond the best by date that the mayonnaise will be good for. Signs that the mayonnaise is beginning to spoil include discoloration, an off smell or taste, and an oily consistency.

Can Duke's Mayonnaise or foods prepared with mayonnaise be frozen?

Freezing dishes or sandwiches made with mayonnaise is not generally recommended. The results may not always be successful, depending on the type of recipe and the amount of mayonnaise used. However, baked goods prepared with mayonnaise as shortening freeze well.

Do dishes made with mayonnaise become rancid in the heat?

A common misconception about mayonnaise is that salads made with it become rancid in the heat and can cause illness as a result of spoiled mayo. The truth is that mayonnaise is highly acidic with a pH between 3.8 and 4.6, which prevents harmful bacteria from growing in food. Typically, food-borne illnesses due to “spoiling” are caused by items dressed by the mayonnaise, and not the mayonnaise itself.

We are unable to ship outside of the contiguous U.S. at this time. We recommend trying Amazon or Walmart.com.

Where is Duke's produced?

Duke’s is produced by our talented teams in Mauldin, SC. and New Century, KS.

Is Duke’s Mayonnaise produced in a facility that is peanut and treenut free?

We have 2 manufacturing facilities that produce Duke’s.  
 
If the lot code has 5 numbers and the letter M, (ie: 20363M) it is produced in our Mauldin, SC plant. There are no peanuts, tree nuts or coconut in this plant.  We package peanut butter into portion control packs in the same facility that Duke's is made. However, every step is taken to ensure no peanut butter contaminates any other product or ingredient. In addition, we do not make the peanut butter, so we do not have any dry peanuts or tree nuts in our facility, nor do we process any. There is no risk of peanut dust making its way through our air handlers and spreading through the plant. This includes dedicated equipment, special cleaning, and allergen testing post clean. In addition, the peanut butter equipment and packaging process is located in an entirely different part of the facility from where Duke's Mayo is made and packaged.
 
If the lot code has 5 numbers and the letters SS (ie: 20363SS) then the jar was produced in our Kansas plant.  This location does not have peanuts, tree nuts or coconuts.

Who is Sauer Brands, Inc

Sauer Brands, Inc., was founded by Conrad Frederick Sauer as The C.F. Sauer Company in 1887 in Richmond, VA.
