Easy Egg Cups
Whether you're meal prepping for the week or feeding family members in town for the holidays, these egg cups are a quick, easily customizable breakfast to have in your recipe rotation.
5 large eggs
1/4 C Duke’s Mayonnaise
1/4 C shredded cheese
1/4 TSP salt
1/4 TS black pepper
1/3 C chopped red bell pepper or vegetable of choice
1/3 C bacon bits or protein of choice
Preheat oven to 350 degrees.
Whisk eggs, Duke’s Mayo, cheese, and seasonings in a bowl until mayonnaise is well incorporated.
Grease a baking dish and assemble egg cups by adding in equal parts of veggies and bacon into a 6-piece muffin pan.
Next, carefully pour in egg mixture, filling each cup until 2/3 full.
- Bake for 25 minutes or until the muffins are set. Remove them from the pan and enjoy.
