Easy Coleslaw

Ingredients
- 10 oz green cabbage, finely shredded
- 3 oz purple cabbage, finely shredded
- 2 oz carrots, grated
- 2 oz fennel bulb, halved and thinly sliced (optional)
- 2-3 T fennel frond, finely chopped (optional)

½ c Duke’s Mayonnaise
- 2 T champagne or apple cider vinegar
- 2-3 T granulated sugar (to desired sweetness)
- 1 t salt
- ½ t pepper
- ½ t crushed red pepper flakes (optional)
Directions
In a large bowl, toss together first 5 ingredients. In a medium bowl, mix remaining ingredients (this is the coleslaw dressing). Pour the coleslaw dressing over the coleslaw salad mix and toss to coat. Serve immediately.

Note: Optional - replace16 oz pre-shredded coleslaw mix for first 3 ingredients.
