Chipotle Lime Chicken Legs and Thighs
Chipotle Lime Chicken
With spicy peppers in adobo, fresh lime and cilantro in the Duke’s marinade, this chicken is sure to please every summer crowd!
1/2 Cup Duke's Mayonnaise
2 canned chipotle peppers, chopped
1 tablespoon adobo seasoning (from chipotle can)
3 tablespoons finely chopped cilantro leaves
1 tablespoon fresh lime zest
3 tablespoons fresh lime juice (from the juice of 1 large lime)
2 teaspoons kosher salt
1 teaspoon Sauer's Garlic Powder
1 teaspoon Spice Hunter's Smoked Ground Paprika
1/2 teaspoon Sauer's Ground Cumin
2 pounds skin of drumsticks
2 pounds skin on bone in chicken thighs
Limes, for garnish
Chopped cilantro leaves, for garnish
Combine the mayonnaise, chipotle peppers, adobo, cilantro, lime juice, cumin, garlic, and salt in a large bowl and whisk until combined. Add the chicken and toss until completely coated. Cover the bowl and place in the refrigerator to marinate for at least 2 hours and up to overnight.
Heat grill pan to medium heat.
Remove chicken from the marinade and wipe off excess
Grill the chicken, turning occasionally, until the internal temperature reaches 165 degrees F, 10 to 15 minutes per side. Baste with the reserved marinade for the final 5 minutes of cooking time.
Serve on a platter and garnish with lime wedges and cilantro.
